Directions

Some additional tips on preparing and storing yeast dough can be found in the article ‘Secrets of yeast dough’.

Instead of bacon, you can use fried mushrooms – champignons or wild mushrooms, with a generous spoonful of butter.

Steps

1
Done

preparation of sourdough

1. Traditionally, we start by preparing opara (relatively thin yeast semi-finished dough, prepared in advance). We heat the milk to
86 °F (30 C). Dissolve the yeast in a small amount, add the dry ingredients (sugar and flour), pour in the rest of the milk, mix, cover with a film and leave in a warm place for
20 minutes.

PREPARING THE FILLING

1. For the filling, cut the bacon and fry it in a heated pan.
2. Meanwhile, cut the onion into small cubes, add it to the bacon and fry slowly over medium heat. We send a crushed clove of garlic there.
3. Stir regularly so that the process is as gradual as possible.
4. Set aside the finished onion and take fresh, and ideally young, green white cabbage. We chop it - choose the size of the cut to your taste.
5. Transfer the bacon and onion from the pan to a bowl, and fry the cabbage in the remaining fat. Heat the pan in advance, make the fire higher than average so that the cabbage does not burn, but is fried. If there is not much bacon fat left, you can add butter.
6. Cook for a total of 5-7 minutes. Return the bacon and onion to the cabbage, mix, add salt to taste. Do not spare the salt - it will be a pleasant accent, the taste of the ingredients will be revealed. If desired, you can add boiled eggs to the filling.

PREPARING THE DOUGH

1. In a mixing bowl, mix eggs with sugar, add melted oil, egg yolk, and salt. Mix and add flour, then knead with your hands for at least 10 minutes (usually about 20).
2. Readiness is checked by stretching the dough: if a window of gluten appears, it is ready. We send the dough to rise.

4
Done

preparation

1. We will bake the cake in a glass form, but you can take any and even bake it without a form at all - just on a baking sheet or a silicone mat. For the result, the most important thing is to observe the temperature regime.
2. Divide the dough into two parts - make one slightly larger. Lubricate the form with oil. We roll most of the dough into a circle and
put in the form.
3. Then we spread the filling. It should be at room temperature. A filling that is too hot or runny can melt or spoil the dough. We roll out the second part of the dough, cover the cake and pinch it. Make a hole in the middle and leave to rest under a towel for about 30 minutes.
4. After proofing, send it to the oven heated to 347 °F (170-175 C) for 30-35 minutes. We take out the finished cake, cover it with a towel, let it rest a little and serve.
