preparation

1. In a large pot, bring the chicken or seafood broth to a boil over medium heat.
2. Add the lemongrass, kaffir lime leaves, and galangal or ginger to the broth. Let it simmer for 5-10 minutes to infuse the flavors.
3. If using coconut milk, add it to the pot and stir to combine. Let it simmer for another 5 minutes.
4. Add the mixed seafood (salmon, shrimp, squid) to the pot and let it cook for 2-3 minutes until almost cooked through.
5. Add the sliced mushrooms, tomatoes, and onion to the pot. Let it simmer for another 2-3 minutes until the vegetables are tender.
6. Season the soup with fish sauce, lime juice, and palm sugar or brown sugar. Adjust the seasoning according to your taste preference, adding more fish sauce for saltiness, lime juice for sourness, or sugar to balance the flavors.
7. Add the sliced Thai bird's eye chilies to the pot for some heat, adjusting the amount based on your spice tolerance.
8. Once the seafood is fully cooked and the vegetables are tender, remove the pot from heat.
9. Serve the Tom Yum soup hot, garnished with fresh cilantro leaves.

Enjoy your delicious and flavorful Tom Yum soup with salmon, shrimp, squid, and seafood! Adjust the ingredients and seasoning to suit your taste preferences.
