Pumpkin pie is a beloved dessert that symbolizes the fall season, particularly in the United States and Canada. Its rich, spiced flavor, often enhanced with cinnamon, nutmeg, and cloves, evokes the warmth of autumn and is a centerpiece at Thanksgiving celebrations.

1. Wash, peel and separate the seeds from the pumpkin, grate the pumpkin on a coarse grater.
2. Wash raisins and dried cranberries and soak in rum. Then the dried fruits will be saturated with additional aromas.
3. Peel the walnuts and fry a little in a dry frying pan.
4. Grate the zest from 1-2 oranges.
5. Preheat the oven to 356 °F (180°C).

The dough

1. In a large bowl, beat the eggs with the sugar until smooth.
2. Add soft butter (you need to remove it from the refrigerator in advance), mix. Gradually add oat flour and baking powder (or baking soda), mix again to form a uniform dough.
3. Add grated pumpkin, walnuts and orange zest to the dough.
4. Remove the cranberries and raisins from the rum, shake off the remaining rum and add to the dough. Mix carefully.

1. Pour the batter into the baking dish, level.
2. Bake the pie in the preheated oven for about 40-45 minutes or until golden brown and ready (you can check for readiness with a toothpick - if it comes out clean, then the pie is ready).
3. After baking, leave the pie to cool slightly in the tin, then remove it and sprinkle with powdered sugar, if desired. Serve warm or cool.

This pie recipe is quite easy to make and tastes great, especially when served with a cup of tea or coffee.
