Cream of mushroom soup is a hearty dish known for its creamy texture and rich flavor. For a lighter version of the soup, use skim milk or substitute broth for the cream. Garnish with fresh herbs like parsley or microgreens for vibrant color and extra freshness.

PREPARATION

1. Cut the onion and champignons into small pieces.
2. Fry mushrooms and onions in a frying pan over medium heat with the addition of vegetable and butter until tender (5-7 minutes).
3. Place the fried onions and mushrooms in a saucepan, add salt, pepper and cream, blend with a submersible blender until creamy, then add milk and blend with a blender again. Adjust the thickness of the soup to suit your taste.
4. Boil the soup over medium heat for 3-4 minutes after boiling.
5. Garnish your cream of mushroom soup with herbs to your taste.
Croutons toasted with herbs and olive oil in the oven are also great for this soup.
