Making cutlets

1. Start by preparing your chicken breasts or pork loin slices. If using chicken breasts, place each breast between two sheets of plastic wrap or parchment paper. Use a meat mallet or rolling pin to gently pound the chicken until it's about 1/2 inch thick.
2. For pork loin slices, you may not need to pound them as they are usually thinner. Season both sides of the flattened chicken breasts or pork loin slices with salt and pepper to taste.

Cooking bacon-wrapped cutlets

1. Next, take two slices of bacon for each cutlet. Lay them side by side on a cutting board, slightly overlapping. This will form a base for wrapping the cutlets.
2. Place a seasoned chicken breast or pork loin slice at one end of the bacon slices. Carefully roll the bacon around the chicken or pork, ensuring it's fully covered and slightly overlapping. If needed, secure the bacon in place with toothpicks.
3. Repeat the process for the remaining chicken breasts or pork loin slices.
4. Preheat your oven to 375°F (190°C).
5. Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
6. Heat a skillet over medium-high heat. Once hot, add the bacon-wrapped cutlets, seam side down, and cook for 2-3 minutes on each side until the bacon is slightly crispy.
7. Transfer the seared bacon-wrapped cutlets to the prepared baking sheet. Bake the cutlets in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature reaches 165°F/75°C) or the pork reaches desired doneness.
8. Once cooked, remove the bacon-wrapped cutlets from the oven and let them rest for a few minutes before serving.
