Chicken breast meat recipe: the fruity delight of the plum sauce perfectly complements the meat or poultry both in the dish and in the sauce. Here, the sauce goes well with chicken, fried in a cracker crumb breading, with a delicious crispy crust.

• Chinese plum sauce can be replaced with apricot jam. If it is too sweet, add lemon juice.

1. Cut the chicken breasts (without the skin) into four parts. In one small bowl, beat an egg, pour crumbs into another (pound a cracker). Heat the oil in a wok or deep fryer.
2. Dip the chicken in the egg and then in the breadcrumbs, tamping the crumbs. Shake off excess. Deep-fry for 3-4 minutes until golden brown and ready. Place on a cutting board with a slotted spoon.
3. Place plum sauce and hoisin in a pan, stir in water and heat until boiling.
4. Cut the chicken into pieces, place on a plate, pour over the sauce, decorate with cucumber strips and serve.
