1. Cook the noodles according to the package instructions until al dente. Drain and set aside.
2. If using shrimp, remove the shells and devein them. Rinse the seafood under cold water and pat dry with paper towels.
3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the broccoli florets, bell pepper slices, zucchini slices, and sliced mushrooms to the skillet. Cook, stirring occasionally, until the vegetables are caramelized and tender, about 5-7 minutes.
Season with salt and pepper to taste. Remove the caramelized vegetables from the skillet and set aside.
4. In the same skillet, heat another tablespoon of vegetable oil over medium-high heat. Add the minced garlic and cook until fragrant, about 1 minute. Add the mixed seafood to the skillet and cook until they are opaque and cooked through, about 2-3 minutes.
5. Add the cooked noodles and caramelized vegetables back to the skillet with the seafood. Pour the teriyaki sauce over the mixture and toss everything together until well combined. Cook for an additional 1-2 minutes, allowing the flavors to meld together.
6. Transfer the noodles with seafood and caramelized vegetables to serving plates or bowls. Garnish with sesame seeds or fresh cilantro leaves, if desired.
Serve with lime wedges on the side for squeezing over the noodles before eating, if desired.
