Lobio does not have one ‘classic’ recipe, because in different parts of the Caucasus it is prepared to their own taste. I like this recipe, but lobio with pomegranate seeds or nuts are also very tasty.

1. Pre-soak beans for 12 hours, wash 4-5 times.

1. Pour the beans with water 1:1, let it boil, then reduce the temperature, add a whole onion, a bay leaf, and 3 peas of allspice. We leave Lobio to simmer until half-ready.
2. Finely chop the second onion, pepper, tomato, 3 cloves of garlic. (We first lower the tomato into a pan with beans for 1 minute to remove the skin).

FRY THE VEGETABLES AND ADD THEM TO THE BEANS

1. Fry the onion, then add pepper, then tomato, garlic. Then salt, basil (the more herbs, the better) can be added to suneli hops.
2. Puree the vegetables with a blender.
3. As soon as there are 10 minutes left until the beans are ready, pull out the bay leaf and onion. Add the mashed puree to the beans, mix well, throw in 2 cloves of garlic, you can also add dried herbs.
4. Bring to a boil, cover with a lid, leave for 30-40 minutes so that Lobio is infused and saturated with the taste and aromas of herbs and spices.
5. Serve with fresh herbs.
