Directions

Before adding bacon to the pizza, pre-cook it slightly. This helps render some of the fat and ensures the bacon is crispy after baking on the pizza.

The pickles should also be lightly fried to remove excess liquid. Slice the red onion very thinly, this will add a piquant flavor to the pizza.

Onions pair wonderfully with bacon and pickles.

1. Sift the wheat flour using a sieve, so the dough will be enriched with oxygen.
2. Place dry yeast in a deep bowl, add sugar, salt, water and olive oil.
3. Mix everything thoroughly, then gradually add the sifted wheat flour. Knead the dough with your hands until it becomes soft and elastic. Then transfer the dough back into the deep bowl and leave in a warm place for half an hour.
4. Thinly slice the bacon, pickles and red onion. Grate Parmesan onto a fine cube grater.
5. In a frying pan, fry the bacon and pickles separately on both sides for 30 seconds on each side.
6. Remove the dough from the bowl and roll it out with a rolling pin into a thin round layer with high sides (press with your fingers 1 cm from the edge of the dough) on a floured table. Place the dough on greased parchment paper.
7. Pour tomato sauce onto the dough and spread it over the surface.
8. Place the filling on the dough, distribute evenly and sprinkle with Parmesan.
9. Place pizza in oven preheated to 356°F (180°C) for 20 minutes.

Serve the dish hot, you can decorate the pizza with fresh basil leaves or other herbs.
