Soak Cranberries in Liqueur: before adding dried cranberries to the cheesecake batter, soak them in a flavored liqueur or rum. This adds a subtle boozy flavor and plumps up the cranberries, making them juicier and more flavorful.

1. Moisten a large mixing bowl with water so that the cottage cheese does not stick to the walls.
2. In this bowl, mix the cottage cheese, eggs, sugar, dried cranberries, salt, vanilla and baking soda.
3. Add flour and mix until smooth.
4. Form small cheesecakes from the resulting mixture.
5. Heat the oil in a pan (you can add a little butter, then the cheesecakes will have an even more delicate creamy taste) and fry the cheesecakes on both sides until golden brown.
6. Ready cheesecakes can be served with honey, jam, sour cream or fresh berries.
